I'd like the ability to send signup notifications to multiple addresses (coordinators) and/or to be able to send notifications to a different coordinator for each event.

I don't think you can send the notifications to more than one "coordinator" but you can set different coordinators for different events.

In settings, you can set the defaults, but one you create the event and enable it for sign-ups, you can put whatever email address you want in the 'Send signups to:' box. Just click on the 'edit' tab and scroll down.

I think the basic concept articulated in this feature request is a good one.
However, I believe the whole email functionality of this module is weird and needs rethinking.
Therefore, this is hereby postponed in favor of #290305: Split out email functionality into separate submodule(s).
