If I add a valid coupon on the checkout page, the shopping cart pane above doesn't get updated.

The checkout cart contents pane is not Ajax enabled by default. However, uc_vat does use Ajax to update that pane, and fixing this issue while not interfering with uc_vat will be difficult.
