Yes, I would appreciate such feature. It would be even better if the module respected my regional setting, where you can configure the first day of week for the whole site.

just one thing the variable exist variable_get('date_first_day') in date.api could we use it by default ?

There is an issue for 6.x that #413858: Office hours does not respect "First day of week" setting (grouped values formatter). That settings lives at admin/config/regional/settings. I don't know if Office Hours would need it's own settings for the same thing, but anyway that site-wide settings should be respected (as mentioned in comment #2 by otx). A bug.
