Is there a way to simplify organizing meetings with other site users, like: what date would fit best for a small group of attendees? volunteer_timeslots comes close but is not quite what I'm looking for.

Sorry, that functionality seems a bit far from what this module can offer. Maybe you should look into one of the voting/rating modules? Someone could post several possible event times and then each possible attendee could vote on each event as a meeting time?
