I have been looking at notifications and confess I'm having real issues trying to get to grips with it!
1. As admin I'd like to get a notification every time someone registers - should it be doing this anyway? I've looked at the options in the advuser module but although it can email roles on new registrations these are member roles rather than admins. Whilst on the subject, I've just spotted that emails from advuser get sent with no From or Reply-to - could that be part of the same problem if it isn't aware of a defaul email address?
2. For users I'd like an easy way for them to subscribe to forum threads (automatically if they have posted a thread or comment, or by opt-in to other threads) and less importantly to keep track of page changes.
I've seen notify, comment_notify and subscriptions modules but really cannot fathom which best suits my needs!

Forgot to mention I've also seen tracker!
But more impartantly I now realise that the crucial bit I didn't mention is that I want them to be emailed with updates, although optionally in daily digests if possible.

Your best bet, is to install
Your best bet, is to install these modules on a test platform on your webserver, since you will need access to a mail server.
Set up a subdomain on your site, where you can keep a test/demo copy of drupal installed and take the modules you are asking about for a test ride. Taking a look at them myself you may need each one of them depending on your use case.
Subscribe, looks to me like it allows thread subscriptions.
comment seems to allow notification of comments. (Though in a threaded comment environment I wouldn't be able to guess how this works)
