Apologies if I'm being completely dumb but I've tried to find a node.tpl.php to create a custom node-page.tpl.php and didn't find one. Where is it and how can I edit it?

The reason why you couldn't find it is because there isn't any. Here there is a bit of explanation why http://drupal.org/node/11819.

However, I take your point and may probably added in the next release.
