When setting up a site what do you suggest?

Which modules?

Which themes?

teh core is pretty good. the rest depends on what you need. editor and multimedia would be my next step (but im a noob)

What do you want to do with your site? Then people can make more relevant suggestions. One persons 'must have' is another persons 'avoid at all costs'. :)

I want to move our church site to a drupal system. The current site is http://sequoyahchurch.org and is custom programmed in ASP and SQL. I want to migrate to drupal to make it easier to support and collaborate. I want to start with a similar site to what we have now. Then, add more functionality through drupal. I plan to use my test site http://dbrs-test.com to setup the site then move it to the church after everthing is working.

I just spent a few minutes looking at your church's site. I didn't see anything there that couldn't be accomplished with just the core modules. However, I would definitely add the Moxie (the new old TinyMCE WYSIWYG editor) to simplify content creation. You can add additional modules as you find a need.

IMO a site really only needs one theme. Your challenge becomes finding/choosing the theme you are either willing to use "out of the box" (probably unlikely) or one that you can customize to meet your needs and preferences. A lot can be done by modifying CSS attributes. I suggest adding your own css file and putting your customizations in that file to simplify future maintenance.

Your biggest time sink will be getting familiar with Drupal and porting/customizing your theme. You can probably port your existing theme without real issue.

Page, menu, contact, profile, upload. Then port your theme.
If nice modules gets updated to 5.0 that would help with the navigation you have but you can also hard code that.
