I don't know what the updater.inc file is for, but you seem to be not alone with these "An AJAX HTTP error occurred. HTTP Result Code: 500" errors, specially in Drupal 7.
According to other people posts Drupal 7 seems to be slower on shared hostings due to higher requirements, probably you will find less modules compatible with D7, and it seems to be presenting quite a few problems.
Taking this and you other problems into account, I should consider doing a clean manual install of the latest D6.
Tore it down
I've torn my site down like 3 times since this post, and I finally have it up and running... Kind of, I'm checking out each mod as I install it, rather than trying to actually set up one portion of the site completely. I got sick of spending all day adding feeds to the aggregator, then finding out some other part of the site didn't work, so now I'm adding a little content per mod and making sure there are no errors before moving on. I think if this install doesn't work though, I will try Drupal 6, and hopefully that will work. I've been beating my head against the wall for a month trying to get this site up and running, and it's becoming more of a pain than it's worth.
