My question is (I hope) different from all the other similar-looking ones here.

I've been using this module for a year and generally it's been fine. However, every couple of days I see an error in the dblog:
Error sending e-mail from [address@domain] to [address@domain] : SMTP Error: Could not connect to SMTP host.

I'm assuming that the underlying problem isn't with this module - but I'd like to know what happens after the error is logged? Does the system just give up, so the email is never sent? Or does it try again to send the email later?

It just gives up, there's no spooling of any sort. I do think it's a nice feature request for the not-so-near future.
