I kinda only have a simple question, when using attributes which are all out of stock, is the "out of stock" message not supposed to appear in the teaser view?

Currently it only displays for products that have no attributes, so when they have attributes I have to go into product view and select each attribute before I see that they are all out of stock.

Yes, it's by design, however you have raised an interesting feature request. I will leave it open to see if I can tackle at some point or for somebody else (you perhaps) to tackle it.
