It would be great if there were a copy of the drupal site so we noobs could see how it all fits together?

Take a copy every hour, publish the admin password for the copy and just reset it on the hour.

I think it would be a great training tool?

There is one already; it helped me a lot to play around with 5.0 before I installed my own website.

There is a link to the demo install on OpenSourceCMS in the orange box on the front page. Using drupal.org itself wouldn't be practical. User accounts would be exposed and the database itself is several hundred MBs.
