One idea I heard today was to build sets of schedules. It would have been good to say "If you are brand new to Drupal and need to get started, here's how."

or "If you know Drupal a little bit and are a designer, here are the best sessions."

This is a tool the content team can use to lay out roadmaps to make sure major constituents are taken care of AND for those people to find the right schedule.

Off the top of my head I'm thinking maybe taxonomy to tag sessions with the different types and then expose that filter on the schedule view?

That would work - Nodequeues seem ideal here so that you can sort :).

Wouldn't sorting be defined by where the items appear in the schedule?

Good point - Time in the schedule probably is the most common useful way to present them.
