When I change the Field Key to a different value the label for that field no longer shows when viewing the form.

I can't reproduce this problem. Are you sure that the label display hasn't been set to "None"?

Yes you are right the Hide component title checkbox was checked so I think the bug is that this checkbox is getting checked when editing the component. When I added the field this check box was not checked. Then when I edited the field to change the field key the check box got checked.

Could you try using version 3.11? The way the label hiding works has been changed now that it supports inline labels in addition to just hiding.
