Is there a way to change the user message after a user subscribes to a list? Currently, when a new user subscribes they receive this message: "You have successfully subscribed to Newsletter List List". I want to remove the "List List" text.

Go to admin/settings/mailchimp under "Anonymous Lists Messaging". There you can change this message.
