What is the difference between the preset original and original compact?

"original" is the actual original size of the image as uploaded and "original compact" has just been scaled for the viewport.

If you upload an image of 5Mo (1024x768px), is the image optimize for the web to decrease its weight to 100ko (for example) but with the same dimensions ?

No, this would be handled by the imachecache module.
