Currently, it just gets unpublished. I look in Admin > Site Configuration > Spam, but I don't see those options.

There is no option to delete spam. THere is an option to not let it be posted in the first place.

You will have to train the system so it can properly (better) distinguish between spam and non-spam data. It takes a little time (depending on how much posts you get on your site(s)...) Until then, it may make more mistakes and "unpublish" (never publish) new data viewing it as spam.
