This is a weird issue that we're having on a site. We're using the Simple Access module to restrict some types of content to Logged In Users only via an "Access Profile". However, on most content types, we're not checking that Access Profile box. This works fine as long as admins are creating content. But when basic "authenticated" users create the content, they don't get the "Access" fieldset in their form. And, when it is submitted, it has the "Logged In Users" access profile checked.

I'm not sure if it's a bug in the Simple Access or in the Form API for checkboxes, but if anyone could supply some help or advice, that'd rock.
