We are having a problem where the count is being reset to 1 when multiple users flag a content (in our case that they "like" a comment).

Our environment is using multiple varnish servers, is this perhaps related to some sort of configuration setting in varnish and the browser caching?

Varnish can be "compatible" with any software as long as its configured correctly. I'd suggest making sure "/flag/*" URLs are always passed through to Apache as included in the Lullabot VCL file at http://www.lullabot.com/articles/varnish-multiple-web-servers-drupal

Why you have to include /flag/* ? Request are not send with post?

I create a page in the documentation http://drupal.org/node/1266766 to summarize different infos I found and my own experience.

Request are not send with post?

They're POST requests if done via AJAX but GET requests if using normal non-AJAX links, so if you want to make sure that Flaggings are recorded for anonymous users, the flag path needs to be excluded from being cached.

I'm closing this issue as I think it's already answered. Note that we're working on an issue that makes Flag's anonymous flagging ability interfere with the proper functioning of Varnish in #1258764: Flag starts a session on anonymous user loads which is bad for pressflow/varnish.
