Title says it all really.... Do I upgrade straight to 5.1 or do I have to go to 5.0 first?
5.1 is a security fix only, so 5.0 would have to be patched anyway and from what I can see 5.0 is not available for download now.

Yeah, forget 5.0.
5.1 *is* 5.0 only with some bugs fixed... bugs that could potentially screw your upgrade, who knows.
So 5.1 it is.
