Jeremy Tirrell (from Purdue University) had written Using Drupal in an Academic Environment in http://praxis.technorhetoric.net/index.php/Webcoursetools/tirrell1.

More attention is put into technicalities and the academic context than in pedagogy and how Drupal had really helped his University/courses, but even so, it is valuable as a source of direct experience in pedagogic uses (and examples) of Drupal.
