I would like to have the author's role be displayed but I don't see that in the list of tokens on my page. I tried [author-role] anyways but it didn't work. Can you tell me how to get the role?

The Submitted By module is not supposed to provide tokens; yes, there are a few only because there was no other way to get them. The Tokens module would likely be the one that should provide this token for you.
