In order for us to use the Update status module, there needs to be an "official release" of this module (no "-dev"). When might that be available?

I don't know.
I never create official releases for such small modules. I don't even know how to create them..
The current dev release is stable and was tested during a long period of time. How does update_status module work? May be it is enough for you to remove -dev suffix in login_destination.info module? I think it will work.

I don't think so, because it checks back to DO. You can also create a -beta; that's considered non-dev.

I have version 5.x-1.x-dev running on six production sites right now. I can vouch for it's stability.
