Here is my idea: every page on my site would have this module on, but I would change "click link" to "Click if you found this page interesting"

Are there any drawbacks you could see to using this module in this way? Obviously I would have to allow "clicks from my site"...also, is there an easy way to prevent single users clicking/voting 50 times??

Is there anything else I need to consider before using this module as a type of voting module? Thanks.

It was not designed to do this, but if it works for you, then it is a good thing.

There is no mechanism to prevent flooding in this module.

If I were you, I would use one of the many voting modules available.
