What's the best way to do this so I can get back to how the module was before the reload?

Implement hook_addressfield_format_callback() and use the actual field value instead of the fully formatted value?

I'm just going to go ahead and mark this a duplicate of the more specific #1427682: [API change] Make expanding an administrative area code to its full options list value optional that I intend to address soon, though there are other general formatting issues that may also be similar to this one.
