When I upload a couple of images, then click the save, but have missed filling in a mandatory field etc, the uploaded files are no longer there, and have to be added again.

Agreed. same problem here.
Also, any other ajax widget on the same form causes mupload to lose its references and throw a bunch of errors.
To replicate, add a normal file widget to the same form. add some files to mupload, then add a file using the second widget.
All images in mupload will disappear, and multiple errors get thrown.
I guess theres a bug in the form rebuild.
This module works great with a few patches. This is the last remaining issue we have with it.
Its a shame, because this is the most elegant multi-file upload solution for drupal7 at the moment.
