Unless I am missing it (which is quite possible since I am new to Drupal), I would like to see a way for the FAQ questions to be sorted/weighted so I can control the order they are displayed within a category.

This has been discussed before and will be tagged as a duplicate as soon as Stella sees it. You can use the Weight module or change the creation date/time. When the rate of changes subsides and I have more time available, I plan on adding this feature unless someone beats me to it.
