Currently you can uninstall this module and reinstall it and the old variables will still be in place. hook_uninstall() should delete them.

Patching blind as I cannot get the variables to be created in the first place (UPS isn't showing as a method). Waiting for andrewmriley's patches to possibly create a new issue.

Looks fine to me.

Note that variables are not created unless changes are made. But you should be able to just configure shipping and see lots of these variables appear.
