A nice feature would be the ability to have separate styles for the menu and the sub-menu items.

Right now, I'm using the "Mix and Match" theme and the Superfish menu looks best with the "none" style. This makes it transparent so it blends in with whatever background is behind the menu. Unfortunately, this also makes the sub-menu items have a transparent background too, so they're hard to read with the text underneath them.

If they had separate styles, I could make the sub-menu items have a solid background and thus be easier to read.

Agreed. I would love the ability to skin the sub menu via the front door.

a menu that has a submenu could easilie be styled with the classes or using selectors like

ul li ul {}

i dont understand the feature request. you want extra classes for submenus?
