it would be nice for the module to insert a checkbox on the my account page to opt out of emails to the role that they belong too.

perhaps there should be a module setting to enable "opt-in", "opt-out", and "no choice" or something like that.

Likely this would best be done through the profile module--a profile field that, if present, would be tested by mail.module.

Now implemented in 4.6 and CVS head. Users have ability to opt in to emails on registration and user edit forms.
