Is it possible to have different sign up forms for different nodes or Events? How would one implement this if it's possible. I know one can modify the theme template to change or increase the number of fields SignUp calls but I guess I'm not smart enough to answer my own question.

you can change the signup form for your whole site (see INSTALL.txt for details). you can't change it per node-type or per-node. see http://drupal.org/node/29568 for the original feature request about it.
