According to the last docs I read on here, currently, there is no way to move files using the File Attach feature. So files are copied over. But is there no way of adding a function to at least delete the original files after the node is saved? This would help greatly and take out a lot of the manual work out of the equation.

This is actually the way "move" has always worked, even in Drupal 6. Moving directly is even more difficult, but copy and delete is actually what we're trying to solve already, so this is a duplicate of #1280826: Restore the "Move the file directly to the final location" feature in D7.
