While other content types - even CCK-types - show a "report as spam" link, this is not the case for guestbook entries. As such, the spam module cannot be trained. Is there a way to enable this? Could this be related to the absence of "guestbook" in the node-type table?

You are right. The reason is that guestbook-entries are not really drupal-nodes. So a lot of feature of nodes are missing for guestbook entries.
You have to add you spam-identifying words as custom-filter in the spam module.
