On the sort settings page, I can't activate the relevance as a sort field (n/a) and so this option is never shown in the sort block. Is there a reason for that or have I a misconfiguration of the fields or the sort module?

I understand your point, it could be a visible option as well.
This should require a little patch, will have a look when I can.

Check out my patch at #1369220: Rethink the UI of the sort block instead of copying facets.
And please post in that issue if it works for you or not.

I'm using that patch on my site. It enables you to use relevance like the other sort options.
