How can I limit the url to show only one category in the path and not so many if the user can choose more than 1 taxonomy term?

Looking for an answer to this as well. Does not matter to me which one is shown just so long as it gets one of them and limits to one.

I ended up using [term:name] as the token. I forget now why I chose this, but this seems to work fine. I think that token limits it to the first listed rather than multiple.
