Anyone know what steps one needs to do to replace the Drupal logo in the URL text field with a different logo?

You can go to the administer > themes page to give the path to, or upload, a new one.

Note: some browsers will not register a changed favicon even after repeated refreshes.

This is called a favicon.ico. You need to create a new one or delete the current one. There's lots of free software out there that allows you to create one.
