I am looking to set up three different events. Each of these events will be sold in my store using Ubercart. I would like to be able to apply a different role to the user based on which event they signed up for. Is there a way I can edit my signup node settings and override the default role set on the admin page?

There may be a way to do this with Rules and Signup Rules. You can trigger rules when a user signs up for a node and I think you can assign roles with Rules. If there is a limitation with Signup Rules post an issue in the queue.
