Editing signups works now, but every entry appears several times in the admin interface for signups. If two persons have signed up for an event every entry is displayed two times. If three persons have signed up every entry is displayed three times and so on.

Try to revert the views to the default, I think that should solve the problem.

This is caused by the patch in #1426028-1: Edit signup link is not displaying which is being reverted by #1358258-13: Updating to Views 7.x-3.0-rc3 breaks Signup module. Please test and report back there!
