From what I can tell, you need to have the "Embed Inline Media" filter enabled for the text format you're using on a node. However, I only have the "Converts Media tags to Markup" filter. Am I missing something? I'm using the most recent versions of Media, Media: YouTube, and Embedded Media Field modules.

I have the same problem. The module for the 7 version is much lighter than the other.

I installed the Embedded Media Field 7.x-1.0-alpha1 (I also tried every other version) for drupal 7 and did not get the modules that are referred to in the documentation:
Embedded Video Field
Embedded Audio Field
Embedded Video Thumbnail
Embedded INline Media

Have they been combined into one?

The video filter module does this just fine : http://drupal.org/project/video_filter
Downlaod, activate and go to the filters section to activate the new filter for each relevant text format.
It also allows to set a player size.
