I'm finding that images I upload during the product creation are not saving with the node. Only when I go back in and edit the newly created product node, re-upload the images, and then re-save do the images show up in the node. Any ideas what I can do to fix this? Thanks

All image support in Ubercart 6.x-2.x is handled by Imagefield module, so you should ask all image-related questions over there: http://drupal.org/project/imagefield

the imagefield guys are claiming their module works and that its an ubercart problem :/

This doesn't happen to me; images are available immediately when I create a new product. Ubercart does nothing special with image fields, so it is probably not an Ubercart problem, and may not be an Imagefield problem, but an issue with another module that interacts with Imagefield in some way.
