I got a wired error situation:
1. The contact form sends a copy of the mail to the user, but no mail to me (reports an unspecified error).
2. When entering a message with the contact form's mail adress as the user's mail adress, both mails are delivered.
I got Drupal 7.12 with Mail System 7.x-2.31, Messaging 7.x-1.0-alpha2 and Mime Mail 7.x-1.0-alpha1.

How would I go about debugging this?

Look in the Drupal latest log entries, and / or server php log. Maybe there is a clue there.
