I understand that Commerce Kickstart is an installation profile, and that it's to be used when installing Drupal. But what do I do if I already have a Drupal installation, and I want to benefit from what this profile offers? Is there a trick people use to do this?

bojanz commentedYou can try #1, though it's a big hack that can break everything if you're not careful.
Generally, Kickstart is Commerce + a few settings you can easily replicate (product_display content type with a field_product product reference field, enabled cart block) + a bit of sample content. So until Kickstart gets to 2.x, you can just replicate what it is doing yourself.
