Regardless of what order I change the fields on the Product Type "Manage DIsplay" tab - the image field stays at the bottom of the page? Tried it in two different themes so I don't think it's a theme issue...

Ahh, yep. The product type's "Manage display" tab is only used for selecting and configuring the display formatter for every potential view mode, but it's the node type's "Manage display" tab that is used to reorder injected product fields in relation to node fields on the product display.

I am having a similar issue, whereby changes to the Product Display content type do not affect the field display order on Add to Cart form or the Rendered Product display.

The solution is the same two years later. : )

You're looking at different fields in different contexts and so need to use the appropriate manage display and manage fields tabs. Let's leave this old issue closed.
