This is just a particular case of http://api.drupal.org/api/drupal/modules!system!system.api.php/function/... but it's important enough to the commerce entity access system that a note in commerce.api.php of how it works with the various commerce entity access tags would be useful.

I'd suggest with an extra hook, the same way that http://api.drupal.org/api/drupal/modules!system!system.api.php/function/... is documented. @see statements connect up the different related ones.
