There is two issues, both seems can be solved with some tuning of Views.

a) Contact list, url is crm/contact :
I think usage of 'Organization Name' as a column title is not correct, we have also individuals, etc here.

Just 'Title' should be fine IMHO.

b) when I visit URL like crm/contact/4/activity I have 'Participants' column empty for all entries, but all the shown activities have Participants for sure.

first point can be fixed with patch from issue #1541724: Add VBO operations to the CRM Contacts page
