scor commentedThere is nothing that prevents you from mapping your content types + fields to any of the types defined on schema.org. It's just that so far the types Event, Recipe and Person seem to be well understood by Google.
Regarding Real Estate, there isn't yet much available on schema.org besides http://schema.org/RealEstateAgent - there is a proposal at http://www.w3.org/wiki/WebSchemas/RealEstate about adding more support for Real Estate.

scor commented@khmilhollin you can already map your content type to 'Organization' in the "schema.org settings" vertical tab of your content type edit form. As far as I know Google does not support it yet but I'd encourage you to start using it because 1) it is the best way to show Google they should support it (I believe they monitor the types used on the web and decide what to support that way), and 2) once they start supporting it your site will be one of the first to show organizations as rich snippets.
