In a user reference, is it possible to have some sort of clickable button to reference the current user? Ie, instead of having to type out their own name/username, they could simply click a 'Me' button that would automatically reference themselves?

Sure, just write a new widget (and place it in a new module).
Entityreference doesn't optimize for individual entity types (supports them all the same), so it's not a feature that makes sense in the main module.
