It's really impossible to list off all that's changed since our last major version, but feel free to read about the goings on in our releases here or at the forums of Ubercart.org.
Of special notice to many store owners: Ubercart is now a certified PayPal solution for Website Payments Standard, Website Payments Pro, and PayPal Express Checkout. You can read more about it at http://www.ubercart.org/paypal if you're trying to figure out which service to use.
Thanks go out to the many folks who have been helping Ubercart get better and better. Be sure to check out all the live sites listed in our forums and the project page here at Drupal.org.
