It would be nice if the site would prevent or signify volunteer time slots that overlap/conflict. We could use this for our church, but one of the big problems is scheduling conflicts with other events.

such a thing requires a much more complicated module and data structure.

Perhaps CiviCRM's CiviEvent has some support for this.
