Drupal Gardens is a prepackaged hosted solution with some nice additions that make it more approachable. The drawback is you can not load your own modules or themes which places limits on what you can do

DG has built in modules and templates...BUT is very slow to WORK WITH.
Takes 10-30 seconds or more to make changes...i thought D7 might be faster.

I'm not seeing those low speeds on DG. What changes are you trying to make? Is this on their free account/shared hosting platform?
As far as running drupal 7 on your own server, it depends on the hardware, how many modules are in use, how many users on on the server, what kind of caching is being used, whether you are using shared servers, VPS, or Dedicated and so on and so on.

Are you using Cable or DSL?
Modules could be a problem...but i don't have many modules active in DG.
I also dropped the overlay in DG...which helped...but its still slow.
What hosting do you recommend for D7?

My best advice is to find a host with which you can grow. ie: a host that aids in moving from smaller accounts to larger as your needs grow.
