Would it be possible to incorporate EMField and Acidfree so that users could create galleries of video (youtube etc...) content, audio etc... ?

no idea how acidfree works. out of scope for the meantime. however, if there is a lot of demand for it, and acidfree has a friendly api, i'll consider looking at it (maybe as some sort of add-on module). someone else is free to work on it meanwhile; you could also approach the acidfree maintainers.
